Cooking in the House of Q:
What does this Q Mom cook when you have a picky toddler, tired husband and a baby almost ready for solids? I have been cooking up a storm around here and have been enjoying it. I've been working hard to think ahead and plan meals. It's hard to think in large scale and plan for more than the next meal but it's helping with the slump we were in before Christmas.
I cook an infusion of vegetarian and environmental conscious meals. I love vegan and vegetarian food but still enjoy chicken, turkey, pork and beef. So I vary it depending on what we've had and what we need to eat. My mother-in-law, Maryliz LOVES to cook, so many of my recipes come from her collection. She has so many good ones... but I also love the homecooked traditions of my Mom's cooking. she cooked many simple and delicious meals when I grew up. So a shout out to both ya!
Here are some of the meals I've made recently:
Spiced Red Lentil, Tomato, and Kale Soup from ohsheglows.com
Authentic Black Bean Soup
Barley Lentil Soup
Brazilian Stew (All three of these are from the cookbook Slice: Health Inspired Food by Barb Davies and Jennifer Rallison)
Baked Rotini with Chicken, Asparagus & Sun-Dried Tomatoes from The Best of Fine Cooking: 101 Delicious Chicken Recipes
Chicken Lettuce Wraps from Best of Bridge
Tongue Tai`d (Pad Thai) from Eat, Shrink and Be Merry, Janet and Greta Podleski
Here's what I'm going to try:
Bean Fritters from The Food Matters Cook Book by Mark Bittman. If you don't know about this author or boo k- you must check it out! it's awesome.
